This recipe does not need any specialty ingredients, you probably have everything on hand already. It’s Vegan, Gluten-Free, Soy-Free, Tree-Nut Free, Seed-Free, and free from any complicated stand-mixers, Vita-Mixes, dehydrators. In fact, one bowl, a fork and a spoon is all you need. It takes 5 minutes to mix it, and 20 minutes to bake. Then you’re done and you’ve impressed yourself and your family. With very few dishes dirtied. Gotta love it when that happens. [print_this] Vegan Gluten Free Cinnamon Raisin Banana Oatmeal Muffins Makes One Dozen 3-Bite Muffins 1 large ripe banana, mashed 1/2 c dry oats 1/3 c brown sugar 1/2 c white sugar 1 heaping Tsp Cinnamon 1 heaping Tsp Vanilla Extract 1/2 tsp Baking Soda 1/3 c raisins (omit, or use other dried fruits, nuts, seeds, etc. as you prefer) Mash the Banana with a Fork, add all remaining ingredients and stir to combine. Bake at 375F for 10 minutes, then turn oven temp down to 350F and bake for another 8 minutes, or until done and golden. Note: If you want to reduce (or even omit) most of the sugar, feel free. I like sugar though. Note: There is no water, mylks/milks, or liquids added. If you feel you need a splash of something, go for it. A splash though, that’s it. [/print_this] Directions: Mash the Banana with a Fork Add everything else Stir to Combine Add mixture to muffin liners Bake at 375F for 10 minutes and then I turned the temp down to 350F and baked for another 8 minutes They’re Done!
