If you’re in need of a luscious, crowd-pleasing Valentine’s Day dessert, this one is perfect and tastes like a million bucks but uses plenty of baking shortcuts so it’s super easy to make.

First make the sugar cookie crust by combining a packet of sugar cookie mix with butter, an egg, pressing it into a pan, and baking it off. A big tip here is not to overbake the sugar cookie layer or the finished bars will be overly chewy and hard. Err on the side of underbaking is my recommendation. Top the baked sugar cookie crust with a mixture of cream cheese, milk, and instant vanilla pudding mix. I used regular pudding mix rather than sugar-free and cannot comment on how these will turn out if you use sugar-free pudding mix. After a stint in the fridge that enables the pudding mixture to set up, top the bars with whipped topping and sprinkles. I used these Sweetapolita sprinkles because all of her stuff is just so cute.

How Do The Bars Taste

My 12 year-old daughter gave these a 10 out of 10 and I would have to agree. The sugar cookie crust is soft but plenty chewy which is a great contrast to the cream cheese and pudding layer. That layer has rich vanilla flavor that complements the sugar cookie crust and it’s squishy, light, and airy. If you like lush-style desserts, you will love these bars. I don’t get much cream cheese flavor nor did my daughter, but it’s there to help give the pudding some body and oomph rather than just being pudding. Since I could eat whipped topping by the spoonful, it’s perfect and not to be missed, along with the color and festiveness that the sprinkles add.

Great For Valentine’s Day Parties

If you’re in charge of bringing a dessert to your office or school Valentine’s Day party, or are the mom on duty making a Valentine’s Day dessert for your child’s school party, this is such an easy dessert to make. It makes a 9×13-inch pan and you can slice the bars smaller than I did and really get some mileage out of one pan.
