I love pumpkin cake, muffins, and bread but I don’t like cakey cookies. To combat the cakiness, there’s no egg in the recipe. Spice amounts: I thought these cookies were perfectly spiced as is, but you’re welcome to add additional pumpkin pie spice to the dough if you find the flavor lacking.
