I’m adding this Sun Dried Tomato Pasta to my list of amazing one-pot dinners. It’s fast, fresh and flavorful and my whole family loves it! This is a meal we enjoy all year round!

How to make Sun-dried Tomato Pasta:

Cook pasta. Drain and rinse with cold water to keep noodles from sticking together. Saute sun-dried tomatoes in a little bit of oil from the bottle for 1-2 minutes. Add butter to the pan. Once melted, stir in flour, stirring well for 1-2 minutes until golden. Add spices: dried basil, garlic powder, Italian seasoning, parsley, and red pepper flakes. Taste and add salt, pepper, and additional spices as needed. Stir in broth and milk and cook for several minutes, until sauce is slightly thickened. Stir in parmesan cheese then spinach. Combine cooked pasta with sauce and toss. Serve in bowls with fresh chopped basil, and an extra sprinkle of parmesan cheese, if desired.

Recipe Variations:

Add Meat: Try adding grilled chicken, shrimp, or sausage. Add Veggies: Sautéed asparagus, zucchini, yellow squash, bell pepper, or broccolini would be delicious!Pasta: Any type of bite size pasta may be substituted.
