Homemade Samoas Cookie Bars My two favorite Girl Scout Cookies are Samaos (Caramel deLites in some regions) and Thin Mints. I could eat them both by the box, in a sitting, and as a kid I did. Sure wish I still had that metabolism. I think you guys love Samoas too because this Samoas Cookie Pie video has been viewed by 8 million people on Facebook! But I digress. For me to say a cookie bar that resembles Samaos but is better than Samoas is a huge statement....

I could not get the last cookies I made with coconut oil out of my mind. They were some of the best cookies I’ve ever had. But they didn’t include peanut butter. So I changed that. I have been in love with baking with coconut oil. I won’t go into my full diatribe again about how it doesn’t make your baked goods taste like tanning oil. I feel like my whole life has been preparing me for this series – and it has been exactly as fun, cozy, and delicious as I had imagined. My hope for the soup series was that it could be almost like a broad and exciting idea board for you – that as you approached the season and looked for new recipes to fill in your soup schedule (a slow food soup on the weekend, a quick soup for a weeknight), we could give you ideas or starting points from which you could take and build a soup that would perfectly fit YOUR moment....

I’ve never been to culinary school, and I did not spend most of my childhood with my grandmother in the kitchen learning to make hundreds of authentic Norwegian recipes....

And after dinner, I want to eat cookie dough ice cream. And I want to sip on a hot chocolate. And an Oreo brownie would be nice, too. But that’s a dilemma that goes beyond just springtime. Desserts aside, I seem to have accidentally struck up the perfect balance with this easy, healthy tomato dill pasta. I’ve been making variations of this chicken chimichangas recipe for years and we never get sick of it. We’ve passed the basic recipe around to many of our friends and its become a favorite for everyone. Not surprising though because these chimichangas are DELICIOUS! I love how simple they are to make, and how adaptable they are. Chimichanga is a Mexican appetizer or entre that includes a tortilla filled with a meat or bean mixture, typically deep fried to make it crispy on the outside....

I’ve reached food nerd status with how happy this Pineapple Coconut Cake makes me. It’s incredible! Dare I say it–it’s on the same level as my Mom’s ridiculously amazing German Chocolate Cake. It’s that good! The cake is incredibly moist (hate that word, but it must be used here), and the flavor combination of pineapple, coconut and buttercream are magical. I also love that the cake, filling and frostings can be made ahead, and even the fully assembled cake tastes better made ahead of time....
