Did you try the unicorn frappuccino? My daughter was dying to try it and while I thought it was ‘okay’, both she and both agree that this unicorn bark is much superior. This bark is loaded with pretzels, marshmallows, toffee bits, mini peanut butter cups, and don’t forget the sprinkles that give it a distinctly unicorn vibe. I used these Sweetapolita sprinkles. Best sprinkles ever.

I made this bark for a person who is all about sprinkles and her name is Sally. Today a group of bloggers and I are surprising her with a virtual baby shower. Her husband Kevin and she are expecting their first baby any day now! I couldn’t be happier for Sally and Kevin! I know Sally has always wanted to be a mother and I know what an amazing one she will be. I saw her twice last year; once at a cookbook signing in San Diego and once on a press trip to Napa Valley. I took a look at her and Kevin both times and thought to myself, yep, any day now they’re going to announce they’re expecting. And sure enough…here we are and what an exciting, special, and wonderful time. I wish them and their new bundle of joy so much love.

I can’t wait to see the first picture of Sally holding her baby. I know I’ll start crying because I remember when she started her blog, got married, I’ve watched her write three cookbooks (crazy!), and now she’s having a baby. The crazy and wonderful thing about blogging and being friends with other bloggers is that you watch them go through major life events and you celebrate those events and joyous moments right along with them.

The irony of today’s post is that it feels like I was just writing this post for Funfetti Cookie Dough Balls which was for Sally’s virtual bridal shower. It’s almost 3 years to the day but boy time sure flies. Back to the recipe. The bark is ridiculously easy, ready in 15 minutes (pop it in the fridge or freezer to harden faster), and loaded with so many textures and flavors. The salt from the pretzels and peanut butter cups tempers the sweetness of the white chocolate while the chewy, gooey marshmallows are a great contrast to the firm snap of the bark.

It’s a very flexible recipe based on what you have on hand and enjoy. It’s a great way to clean out your baking cabinet and use up those nearly empty bags of this-or-that that you’ve been holding onto. Not a fan of something or don’t have it? Use something else. From gummy worms to chopped up Snickers to leftover holiday candy, you can likely use it. The recipe doubles or triples easily if you’re feeding a crowd. I used these Ghirardelli White Chocolate Melts that I found at my regular grocery store. Or try solid white chocolate bars or what’s sometimes called ‘almond bark’. I do not recommend white chocolate chips. They are very resistant to melting yet paradoxically scorch easily. Steer clear and use something that melts much more easily like the white chocolate melts or solid bars. If you don’t like white chocolate, make with milk or dark.
