Dark Chocolate Sea Salt Almond Clusters
You don’t need an expensive (and sometimes not all that good) box of chocolates for Valentine’s Day when you can have these. Homemade always tastes better. They’re easy, no-bake, and ready in about 15 minutes. Whether you want to surprise someone special with these as dessert after a romantic dinner or serve them with wine and a cheese board at a “Galentine’s Day” celebration with your girlfriends, they work equally well in both places. I used Fisher Whole Natural Almonds. Fisher Nuts are preservative free and non-GMO Project Verified. Fisher has nine varieties of recipe nuts certified as Heart Healthy by the American Heart Association. The resealable bag helps keep the nuts fresh for longer. Look for their new packaging on store shelves. The almonds are coated in dark chocolate. I went a little crazy with Valentine’s sprinkles and I love salty-and-sweet things and added a pinch of sea salt flakes to the top of each cluster but it’s optional. The dark chocolate really pops when there’s a hint of salt.

To make the dark chocolate covered almonds, you’ll need:

How to Make Almond Clusters
Simply melt the chocolate, stir in the almonds, and drop clusters of almonds onto a baking sheet lined with parchment paper. I prefer melting the dark chocolate in the microwave, but you’re welcome to do so on the stovetop as well. If melting chocolate on the stove, place it into a heat-safe bowl and then place that bowl over a small pot of boiling water. This will prevent the chocolate from scorching. Once the clusters have been formed, top with sea salt and sprinkles. Then, let the dark chocolate sea salt almonds set fully before enjoying.
Can I Make These in Advance?
Yes! The almond clusters will keep airtight at room temperature for up to 2 weeks, in the fridge for up to 1 month, and in the freezer for up to 4 months. Bring to room temperature before serving.
Can I Use Another Type of Chocolate?
Of course! Note that milk and dark chocolate bars melt the easiest, while white chocolate tends to seize up.
Tips for Making This No-Bake Chocolate Dessert
I like dark chocolate bars for melting purposes in this situation rather than chocolate chips, which have stabilizers in them and can be resistant to melting. But if chips are all you have, they should be fine as long as you take your time melting them. I made this easy no-bake dessert for Valentine’s Day, but you can also make this recipe for Christmas, Easter, or another holiday. Simply switch out the type of sprinkles you use! If gifting these clusters, I recommend putting them into festive mini cupcake liners. It’s not necessary, but it makes for a nice presentation.
