But this recipe is a keeper.  Even if you only have 25 minutes, you can make these from start to finish! Cinnamon Sugar Peanut Buttery Chickpea “Peanuts” with Peanut Flour 1/3 c Brown Sugar 1/3 c White Sugar 1/3 c Peanut Flour 1 Tbsp Cinnamon Mix with a spoon Add 1 can of drained and rinsed Chickpeas to the dry mixture and toss with a spoon to coat.  Keep tossing until the dry mixture is “gone” and stuck to the chickpeas. Bake at 400F on a cookie sheet for 15-20 minutes (use a foil-lined cookie sheet or spray extremely well with cooking spray so that cleanup is not a beast) Remove from the oven and toss mixture with a spoon and bake for another 5-10 minutes or until done.  (I did 20 minutes, toss.  Bake 5 more minutes). Put into a container and allow to cool. Chickpeas will harden up and turn crunchier the longer they are cooled and exposed to air.  i.e. I made mine at 1am and by 10am the next morning after being uncovered on the countertop all night, they were extra crunchy.  That is, the ones I didn’t devour at 1:15am! In a container These are little peanut buttery sugar “caramel” crystals The container full of Cinnamon Sugar Peanut Buttery Chickpea “Peanuts” rocked my 1:15am world.  And Skylar’s the next morning.   “Mmmmm, Mommy.  What are these?  They are so good!” The last time I made chickpeas in the oven it was this recipe for Carmelized Cinnamon Sugar Roasted Chickpea “Peanuts”   I think the peanut flour in today’s recipe helps add just a little more “crunch” and helps to create a more firm “nut” out of what is just a soft chickpea.  However, if you don’t have access to it, I’m sure adding a little regular flour to your cinnamon-sugar mixture could do the trick. These give you all the flavor of a cinnamon sugar roasted nut, with a hint of peanut buttery/peanut taste…without actually eating nuts.  Some people are allergic and in general, too many nuts are hard on my digestion but I don’t seem to have as many issues with chickpea “peanuts” as I would with real nuts.  They are still beans after all.  Ahem. 3. Do you remember tagging along with your parents or mom on errands as a kid?  Do you have any dreaded memories, or any cherished ones? I remember my mom carting me with everywhere she went.  My favorite was going through the drive-thru bank lane because they would always include a roll of Lifesavers in the “tube”.   My mom would get her cash, and I would get my Lifesavers.  A win-win. I also loved grocery shopping and seeing what the free samples were.  And Target runs with my mom were fun, too.  Maybe being on my best behavior for a Barbie or a toy or whatever I may be able to twist her arm to buy for me.
