How to make Applesauce Bread:

Prep Loaf Pans: Line bottom of a 8.5 x 4.5 inch loaf pan with parchment paper (to prevent bread from sticking to the bottom of pan). Lightly grease insides of pan with cooking spray. Whisk together oil, granulated sugar and brown sugar. Add eggs, whisking until smooth. Add applesauce, vanilla, and Greek yogurt. Mix until well-combined. Combine flours, baking soda, baking powder, cinnamon, nutmeg and salt and stir with wet ingredients until just combined–don’t over-mix. Bake: Pour batter into loaf pan and spread into an even layer. Bake at 350ºF for 45-55 minutes until a toothpick inserted into the center comes out clean with just moist crumbs. Remove from oven. Run a knife gently around the side of the pan and then remove bread onto a cooling rack. Enjoy!

Make Ahead and Freezing Instructions:

To Make Ahead: Applesauce bread will stay fresh for 3-5 days, stored at room temperature or in the refrigerator. To Freeze: Allow baked bread to cool completely then wrap in plastic wrap and store it in a freezer safe bag for up to 3 months. Thaw at room temperature.
