Are you, like, personally ready for it? And it is normal that after you’ve been married for about five minutes, you stop buying each other Valentine’s Day gifts? That’s not entirely true, but if this year’s Christmas gifting is any indication of what’s to come during this year’s Valentine’s Day gifting, we are going to be eating a pan of peanut butter fudge together by the romantic light of Lost playing on the laptop. As if you need convincing, here are a few reasons why this peanut butter fudge is perfect for Valentine’s Day. Did I already tell you these have Saltines in them? As in, the crackers. Here in the Philippines the brand is called Sky Flakes and I eat more of them than I’d care to admit thanks to those ever-present mystery sicknesses and/or my mindless snacking habits combined with the fact that we don’t have a very well-stocked kitchen. On the other hand, I can’t remember when strawberry jam has ever tasted so good as it does when spread on those salty white Sky Flakes crackers and served with a glass of milk. Classic and perfect. I have never ever met a Saltine cracker dessert that I didn’t like. My grandma makes these candied Saltine crackers with melted butter and brown sugar, like she does. They are so addicting. That Christmastime toffee with Saltines? Cracker bars? My oh my. If you’ve never made a dessert with Saltine crackers, this is your time. Crush those babies up real good, boil some sugar and milk, stir it all together with some peanut butter, and say halloooo. Peanut buttery perfection – kind of like a cross between a scotcheroo and regular fudge. The Saltines make it a tiny bit crunchy, and the salti-ness (not to be confused with Saltines)? Mmm. Mmmmmmmmm. Top the whole thing with chocolate, and if you’re brave, sea salt (OH YES), and you’re going to have yourself a really happy Valentine’s Day. Plus think of all that time you’re saving.
