Hello, hello! I am sneaking in at the end of the week for a coffee date because I just looked at the calendar and it is the end of July! Like, who is in charge of time around here? I am a non-beef-loving-part-time-vegetarian who now adores beef stew. I don’t have one of those and not to worry if you don’t either. The popovers are made in mini muffin pans, much more common than popover pans. I haven’t tried the recipe in a regular-sized muffin pan because I have a fondness for mini muffins and love the texture and cute factor of mini things. But I’ve read about people having good luck with regular muffin pans. The popovers remind me of cinnamon-sugar mini donuts and that’s a beautiful thing....

This cake is giving me flashbacks because I made a pumpkin chocolate chip Bundt cake back in 2012. I loved that cake so much that I also put it in my second cookbook. And here we are with another pumpkin Bundt cake and I never set out to make a pumpkin Bundt cake. So how did it happen? Easy. Krusteaz sent me some of their Pumpkin Spice Quickbread mix and rather than just making Pumpkin Bread with it, I transformed it into the moistest pumpkin cake you’ll ever taste and one that’s loaded with chocolate chips in every bite and topped with a heavenly chocolate ganache....
