OhNuts! sent me candy-coated almonds and I didn’t want to bake with them because I was fearful that the pink, blue, orange, and green pastel-colored candy shells would bleed and run during baking, creating a big ugly mess on whatever I made. So I decided to go the no-bake route and I stuffed them into no-bake peanut butter cookie dough. A 10 minute project which results in great little peanut butter cookie dough bites....

Just not when you eat a half of a box of Mary’s in a sitting. For some reason though, my homemade Mary’s Crackers don’t seem to give me any issues. The last time I saw her she was about a week or two away from delivering her second baby and was feeling a little camera shy. But today I got to meet her new addition! A little boy named Coltan! He’s only 4 weeks old. What a cutie! And what an angel he was. Nursed and slept. Nursed and slept. Repeat. Her daughter, Ashley, was the same way. Skylar? Not so much....

She’s four years old and I couldn’t make this stuff up if I tried. So consider this as much for me and posterity as it is for you but I’m sure you’ll get a few chuckles. We were at the pool earlier in the week and there was a man who was being loud and just generally obnoxious and disturbing the Zen. He was a bit drunk and was telling loud, crass stories, and just one of those people who you wish would just zip it and enjoy the peace and quiet and beautiful day....

I’ve been excited about a few things lately: Chocolate Finds I may whip up some holiday baked goods for friends with this, too. Just in time for overcast skies and rain. Hopefully we won’t need any roof repairs like we did last December from all the rains. At least the flowers appreciate the rain even if we don’t. I appreciated some of the local the local Raisin Bread Pudding I love this stuff. It’s so dense and chewy and perfect. Not sure if there is even bread in it to begin with or if they just use flour and eggs to make a dense clafoutis of sorts and skip the day-old bread step or what they do, but I need to ask and find out so I can recreate it....

And my ultimate weakness is almost always some variation of a Chili Cheese Dip which I regret to say is almost always is made with V to the elveeta. Just one question: WHY? Let’s embrace healthy and roast some vegetables. And let’s roast them in coconut oil, because you know, it’s healthy. Whether it was healthy or not, I’d still use coconut oil because I love the richness and flavor it adds to food, and yes, it does impart some flavor. Some brands and types add more than others, but it’s not a flavor-neutral oil. There are people who don’t like coconut oil and I’ve heard others proudly proclaim, “It doesn’t make your food taste like coconut so even if you don’t like coconut, you’re safe....

Decadent 7 Layer Brownies These are some seriously decadent brownies and are definitely in my top 5 brownie recipes of all time. That is high praise, but they deserve it because of the incredibly soft and fudgy texture along with all the goodies piled on top. They are incredibly rich, decadent, so fudgy in the interior, with slighly chewy edges, and they are the brownie equivalent of a quarter-pounder. One brownie felt like it could weigh a quarter pound in my hand but I’m not complaining....
