I am a huge Thai curry fan and I decided to tweak my super popular Green Thai Curry with Chicken and rather than use diced chicken breasts, I swapped in ground chicken, with a few minor tweaks. They are expensive on a per bag/per snack ounce-for-ounce analysis but they are also usually devoid of real nutrition and high on salt, fat, and junky ingredients. I try to include whole fruits and veggies, nuts, seeds, dates, nut butters, dried fruit, homemade Vegan GF Crackers or Raw Vegan Kale Chips, or whatever I’ve got in the cupboard or fridge that day....
I gave Scott the card I got for him. As I mentioned, we decided not to exchange gifts for Valentine’s Day. Or any holiday. Skylar scored though! A cute new outfit from Grandma She loves getting cards. More so than the actual gift, I think. I was happy that she enjoyed a few little surprises. She’s clutching the card I gave her with chocolate in it. She is more into the card than the chocolate....

Some people spend Saturday at the mall buying shoes; I spend Saturday at the grocery store buying new kinds of flour and chocolate. I mean, um, vitamins. Here’s my weekend report thus far: I baked. I didn’t use these exact ingredients but very similar. What I made is a spin-off on Pumpkin Peant Butter Oatmeal Bars (Vegan, GF) but without the pumpkin. Sooner or later I’ll get the new recipe posted. And I photographed it. One of my favorite things after the recipe has been developed, the food is baked, made, cooled, sliced, staged, composed, and ready to go is to start taking pictures of it....
Creating These Candy Corn Cookies Candy corn. Oh, the memories of a few pieces clanking against the bottom of my trick-or-treating bucket.
