Strawberry Jam Muffins Recipe

That would be a package of strawberries for 13 dollars. Thirteen. Dollars. That’s why I don’t buy strawberries here in the Philippines, or berries of any kind, really. Don’t feel bad for me. I mean, bananas, papaya, mango, pineapple? Those heavenly golden fruits of the tropics keep my fruit-loving self happy and they don’t require draining the savings account. It’s like… the best thing ever. But the price tag on the berries kills me, and therefore my mouth hasn’t tasted berries in 8+ months....

The Best Protein Pancakes Recipe

comment icon 404 more comments Protein pancakes! made in a blender with no refined grains, no refined sugar, and loads of healthy proteins. I reeeeeeally like where this is headed. Pan-Cakes! Pan-Cakes! Pan-Cakes! With peanut butter and chocolate chips and a little bit of maple syrup, which is just how I ate them growing up, post-swim-team practice, sometimes mushed together into a big pile of “scrambled pancakes” because me and my teenage squad didn’t know what we were even doing with a pan and a spatula, but we knew we needed those chocolate-kissed carbs in our systems immediately, stat, SOS, even if it meant squished together into pan remnants topped with sprinkles and chocolate chips and syrup....

The Necklace Afton S Story Part Five

I’m a jewelry minimalist. I wear my wedding ring, “pearl” earrings, and maybe a necklace on fancy occasions. But this year for Christmas, Bjork surprised me: jewelry! I lifted the red velvet box open and found a necklace laying inside. “It’s a mother’s necklace,” Bjork explained. The diamond was in the position for the 4th month of the year – April. Of course. The month that Afton was due. It was beautiful, simple, perfect....

Tofu And Brown Rice Lettuce Wraps With Peanut Sauce Recipe

comment icon 87 more comments How much do I love a quick pan-fried crumbled tofu and brown rice filling, coated in peanut sauce, tucked into tender little butter lettuce leaves, and crowned with a drizzle of spicy mayo and – obviously – a couple little crunchy fried onions? Judging by the tens (hundreds?) of these that I’ve eaten, the answer is: A LOT. There’s just something about these flavors and textures that makes a person feel good in their heart....

Traffic And Income Report February 2016

Bjork here checking in for Pinch of Yum’s monthly traffic and income report. If this is your first time coming across one of these reports I’ll give you quick explanation of what they’re all about. Lindsay started Pinch of Yum almost six years ago as a hobby. After a year of posting she started to get a decent amount of traffic and engagement. We were curious to see if it was possible to take that early traffic and engagement on the blog and somehow build it into a business....

Vegan Sloppy Joes

I tried to loosely replicate Manwich in my last lentil recipe, Ketchup & Mustard Lover’s Protein & Veggie Mash. But no matter how much ketchup I added, it just wasn’t Manwich. Sometimes it’s fun to re-invent the wheel, like making Raw Vegan Gluten-Free Girl Scout “Samoas” Cookies. Other times it’s not so fun, and you use what you know is tried-and-true, such as a can of Manwich. Which is exactly what I did....

A Few Books

Lately, here are a few I’m loving: Joy the Baker’s book, 100 Simple & Comforting Recipes I feel like I am sitting in Joy’s kitchen when I read this book and that we’re long lost gal pals. Aruba Bound

For the month of August. Scott and I had discussed a trip, for approximately how long we’d stay, and he was like, Babe just do whatever you want. Whatever I want? Okay. Surprise, family, we’re going to Aruba for a month. Baked Chipotle Sweet Potato And Zucchini Fritters

These fritters came to fruition because I had one sweet potato, which I had intended to make soup with, but realized it wasn’t quite enough for soup. Then I noticed a few small zucchinis that were crying out from the depths of the produce drawer and begging to be used before they turned into limp and lifeless green logs. Having no idea what I was going to make, I took out my grater and started grating anyway....

Baked Cinnamon Bun Donuts With Vanilla Cream Cheese Glaze

Really, who doesn’t love a cinnamon roll? Warm baked dough that’s sweet, dense, cinnamony and sugary, ooey gooey, with frosting everywhere. Yes, please. I worked at the mall when I was in high school and between Panda Chinese food, Mrs. Field’s Cookies, and Cinnabons, I ate more sodium, grease, and sugar than should be legal or is good for the complexion. But hey, you’re only 16 and working next to the food court once....

Best Ever Slow Cooker Sausage Stuffing

The BEST Sausage Stuffing Recipe My family loves stuffing. It’s definitely their favorite Thanksgiving side dish, hands down. I wanted to try a new stuffing recipe this year and they told me this one is a keeper. This slow cooker stuffing is buttery soft with a bit of texture from onions and celery. It’s packed with flavor from fresh rosemary, sage, thyme, and parsley. Juicy sausage adds wonderful richness. I used hot Italian sausage and it lends great depth of flavor without being spicy, but use mild sausage if you prefer....

Blistering

It’s about me getting all kinds of blisters on my feet this week. I can go for months without getting a blister and then bam, I got four doosies this week. I didn’t change my shoes or my socks I am not running any longer or changing my stride, my pace, or my route Nothing is different. The only thing I can think of is that there has been more moisture in the air this week because we’ve had rain so the humidity levels are higher and maybe that’s causing some weird friction thing resulting in blisters?...
